Aims
To give participants the basic knowledge and skills necessary to observe the highest standard of food hygiene in the food business.
Outcomes
Know the causes of food poisoning
Know how to prevent food poisoning and food complaints
Know how to identify and control hazards in storage, preparation, cooking and serving of food
Know how to monitor controls and take corrective action
Understand stock rotation
Know how to use refrigerators and freezers correctly
Be aware of the standards of personal hygiene required by good handlers
Understand the importance of effective design and construction of food premises
Know how to dispose waste safely and properly
Know the common pests found in food premises and how they can be controlled
Understand the correct cleaning procedures
Understand how food legislation affects a food business
