Aims To give participants the basic knowledge and skills necessary to observe the highest standard of food hygiene in the food business.

  • Know how to identify and control hazards in storage, preparation, cooking and serving of food
  • Know how to monitor controls and take corrective action

  • Be aware of the standards of personal hygiene required by good handlers
  • Understand the importance of effective design and construction of food premises
  • Know how to dispose waste safely and properly
  • Know the common pests found in food premises and how they can be controlled
  • Understand the correct cleaning procedures
  • Understand how food legislation affects a food business
